What’s a probiotic food? Well, we like to call it the “bariatric bonus foods”. They can be especially helpful after weight loss surgery as they support a healthy microbiome (the bacteria that are living in your gut).
Probiotic foods such as sauerkraut (but also Kimchi, yogurt, kefir and other fermented foods) contain lacto-acid bacteria and enzymes that help to absorb nutrients better.

Ingredients
- 1 baby red potato, peeled
- 2 oz (60 g) sauerkraut
- 2 oz (60 g) chicken sausage
- 1 tsp zero-sugar soy sauce
- 1 tsp water
- 1 tbsp shredded cheese
If you’re not ready to introduce (mashed) potatoes to your diet yet – you can omit them until you are.
There are many different brands when it comes down to (chicken) sausage. And yes, sausage is a processed food that should be eaten in moderation. If you’re sensitive to sausage – you can substitute the sausage for shredded chicken or – if you’re looking for a vegan option – shredded tofu.
If you can tolerate a small amount of sugar from soy sauce – you can also use regular soy sauce in this recipe.
You can boil the sauerkraut shorter or longer depending on how tangy you like the taste. Also, you can use any type of potato for this recipe – but the baby red potatoes are the perfect size for the bariatric tummy!
Tip: add ramekins to your kitchen ware for better portion control (and a tiny dish looks cute too right?)
Step by Step Instructions
Step 1
Cut the potato in quarters. And cut the chicken sausage in small circles.
Step 2
In a pan, add water and boil the potatoes, about 10 minutes or until soft. Remove from heat and mash with a fork.
Step 3
In another pan, add water and boil the sauerkraut, about 10 minutes. Remove from heat and set aside.
STEP 4
In a skillet over low-medium heat, add the chicken sausage, soy sauce and water. Bake, about 5 minutes while coating the soy sauce around the chicken sausage.
Step 5
In a small oven-safe ramekin, add the mashed potato, sauerkraut, chicken sausage and top with shredded cheese.
Step 6
Place the ramekin in a preheated oven – 350 F (180C) – and bake about 10 minutes or until cheese is golden-brown.
