An ‘all-or-nothing’ mindset can be a huge pitfall for old eating habits creeping back – making you feel like a failure if you don’t eat “perfectly”.
There’s no such thing is as perfection.
And that’s exactly what we’re trying to show you with this easy omelet “pizza”.

Ingredients
- 4 eggs
- 1 oz (25g) spinach, coarsely chopped
- 0.5 oz (12 g) pepperoni
- 1 oz (25 g) goat cheese
- 2 tbsp grated Gouda cheese
If you’re still on soft foods – you want to swap the pepperoni for shredded chicken. Why?
For starters, chicken is leaner and higher in protein too. And secondly, processed meat such as pepperoni is a no-no when you’re newly post-op. And keep in mind for later down the line that moderation is key. It doesn’t have to be all or nothing. What’s more important, is to create a lifestyle that’s sustainable in the long run.
Also, you can substitute the goat cheese for ricotta or mozzarella too.
For the topping, choose a shredded cheese of your own liking. Here, we used shredded Gouda cheese.
Tip: use non-stick cooking spray to minimise the amount of fat when preparing your meal. Of course, there’s nothing wrong with using olive oil if you can tolerate this well.
It probably won’t be necessary to add extra salt, since that’s well compensated with the cheese and the pepperoni in this omelet “pizza”. Of course, you can add some ground black pepper if you like to spice it up just a little bit.
Step by Step Instructions
Step 1
In a bowl, whisk the eggs.
Step 2
In a small skillet over medium heat, add non-stick cooking spray and add the whisked eggs.
STEP 3
Immediately, add the spinach, pepperoni and goat cheese. Top with grated cheese.
STEP 4
Close the lid, lower the heat and bake for 8-10 minutes or until eggs are done.
