About this Recipe
Don’t be startled by the amount of carbs in this alternative to regular popcorn. Here’s why:
The carbohydrates found in all legumes, fava beans included, are complex carbs. This means that this recipe is quite high in fiber: a much needed nutrient after bariatric surgery!
Besides fiber, fava beans are packed with other nutrients as well. Yep, they contain essential nutrients such as vitamins A, C, and K, as well as minerals like iron, potassium, and magnesium.

- Seasoning Options: Get creative with your seasonings! Consider using a combination of herbs and spices like garlic powder, smoked paprika, cayenne pepper, or nutritional yeast for a cheesy flavor. Experiment with different flavors to find your favorite combination.
- Portion Control: As with any snack, portion control is important. While fava beans are nutritious, it’s still recommended to enjoy them in moderation as part of a balanced diet.
- Storage: Once prepared, store your “popcorn” in an airtight container to maintain its crispiness. It should stay fresh for several days. If needed, you can re-crisp them in the oven at a low temperature for a few minutes.
