Fava Bean “Popcorn”

Introduction

About this Recipe

Don’t be startled by the amount of carbs in this alternative to regular popcorn. Here’s why:

The carbohydrates found in all legumes, fava beans included, are complex carbs. This means that this recipe is quite high in fiber: a much needed nutrient after bariatric surgery!

Besides fiber, fava beans are packed with other nutrients as well. Yep, they contain essential nutrients such as vitamins A, C, and K, as well as minerals like iron, potassium, and magnesium.
