Ingredients

  • 3 eggs
  • 6 oz (90 g) cottage cheese
  • everything but the bagel seasoning (or any seasoning of your liking)
  • 2 cups chopped spinach
  • 1 cup (100 g) shredded mozzarella

How to give this recipe a twist:

 

  • Add turkey sausage for a more savory flavor.
  • Add broccoli florets or bell pepper for more fiber.
  • Not into eggs? Substitute with shredded chicken or shredded tofu for a different variety.
  • Like it more spicy? Add a tiny bit of hot sauce or sf ketchup for some zest on those eggs!

Step by Step Instructions

Step 1

Preheat oven to 350F (180C).

Step 2

In an oven-safe dish crack the egg and add 1/3 of the cottage cheese. Mix until well combined.

Step 3

Add the seasoning.

STEP 4

Add the spinach and top with mozzarella.

Step 5

Place in oven, about 12 minutes or until cheese is bubbly.

Step 6
