Ingredients
- 2 cups (400 g) cottage cheese
- 2 cups (200 g) diced melon
- 1 tbsp vanilla extract
- 1 tbsp zero-sugar sweetener (we used Stevia)
- 1/2 tbsp cinnamon powder
Toppings:
- Cocoa nibs
- Chopped melon
- Chopped walnuts
If you don’t like cottage cheese, swap for Greek yogurt instead.
Add as many different varieties of fruit to your bariatric friendly ice cream.
Add 2 pitted dates to your mixture to add more sweetness to your ice cream.
Step by Step Instructions
Step 1
In a food processor, blend all the ingredients until well combined.
Step 2
Pour the mixture in a freezer-safe container.
Step 3
Freeze for at least 6 hours.
STEP 4
Remove from freezer and allow to thaw for 15 minutes.
Step 5
Use an ice scoop to serve your portions.
Step 6
Top with coco nibs, chopped melon and chopped walnuts.
