When you want to cook something quick and simple, frozen foods can be the perfect way to save time (and sometimes money too!).
In this recipe, we used frozen panga fillets. But you can use any other type of frozen fish to substitute with.

Ingredients
- 1 cup (230 ml) coconut milk
- 1 tsp yellow curry powder
- 1 tsp salt
- 1/2 ground black pepper
- 2 panga fillets (3.5 oz / 100 g each)
- 1 tbsp parsley, chopped
Recipe notes:
- Substitute the panga filets for any other type of frozen fish.
- Make your own yellow curry spices combining: ground turmeric, cinnamon powder, ground cardamom, garlic powder, onion powder, ginger powder, ground coriander and ground cloves.
Step by Step Instructions
Step 1
Preheat oven to 400F (200C).
Step 2
In a mixing bowl, add the coconut milk and spices. Mix until well combined.
Step 3
In an oven safe dish, place the frozen panga fillets and pour the coconut milk mixture over the fish.
STEP 4
Add the chopped parsley and mix until combined and fish is coated.
Step 5
Place in oven for about 20 minutes or until fish is cooked.
Step 6
Serve as protein by itself or with rice (if well tolerated) and side salad.
