No Bake Strawberry Cheesecake Recipe

Ingredients

  • 1/2 cup (110 g) cottage cheese
  • 1/3 cup (75 g) cream cheese light 
  • 1/3 cup (50 g) strawberries
  • 1 tsp flaxseed

 

For topping/garnish:

  • chopped strawberries
  • mint leaves

• Substitute the cream cheese for full fat cream cheese if you prefer a more rich flavor.

• Omit the cream cheese altogether if you want to decrease the amount of fat in this recipe and replace with more cottage cheese (it will be more moist and a little bit more tangy).

• Replace the flaxseed for crushed crackers if you can’t tolerate flaxseed (yet).

 

Step by Step Instructions

Step 1

Chop the strawberries (or leave them whole).

Step 2

In a blender, add the cottage cheese, cream cheese and strawberries. Mix until well combined.

STEP 3

In a small bowl, add the cottage cheese mixture. 

Step 4

Top with fresh strawberries.
