Bread is a starchy food which isn’t always kind to the small stomach after bariatric surgery (if you CAN tolerate bread – by all means, we’re absolutely not a fan of demonizing entire food groups). But truth be told – sometimes you have to adjust your traditional meals and recipes to make sure you’re able to enjoy them without having to run to the bathroom minutes later.
And that’s exactly why we created these mini zucchini “sandwiches”. Let’s show you how to make them.

This recipe is higher in fat due to the cheddar cheese and the salami. We’re all about creating balance after bariatric surgery and ditching the all-or-nothing mentality. That’s why – occasionally – you may find some ingredients that are completely banned by diet culture.
However, we do believe in moderation too. And you can easily subsitute the salami for shredded chicken or chicken/turkey deli slices if you want to be more mindful about saturated fats in your diet.
Also, you can substitute the cheddar cheese for a thin layer of ricotta cheese. Make sure to grill the zucchini slices first, before adding ricotta cheese to the slices.

Step by Step Instructions
Step 1
Preheat the grill (set to highest temperature if possible)
Step 2
Build your zucchini sandwiches in this order: 1 slice zucchini, 1 slice cheddar cheese, 1 slice salami, 1 slice cheddar cheese, 1 slice zucchini. Repeat for all 4 “sandwiches”
STEP 3
Lightly brush the zucchini slices with olive oil. Carefully turn the “sandwich” around to brush the bottom slice of the sandwich too.
Step 4
Add the zucchini sandwiches to the grill. Heat until zucchini is cooked and cheese is melted.
