If you’re looking for a savory mini-meal with a ton of flavor, then these chicken teriyaki lettuce boats are for you!

Ground chicken is an excellent source of protein with 15 grams of protein per 3-ounce (60 g) serving.

Ingredients

  • 1 tbsp olive oil
  • 1/2 lbs (250 g) ground chicken 
  • 3 tbsp teriyaki sauce
  • 1 tsp 5-spice powder
  • 1/2 red bell pepper, diced
  • 2 tbsp scallions, finely chopped
  • 4 Romaine lettuce leaves
  • 1 tbsp sesame seeds
  • 1 tbsp hemp seeds

Here’s a sidetone if you can’t tolerate lettuce. You don’t have to use lettuce in this recipe. Just omit the lettuce and eat the teriyaki chicken by itself. You could also choose to use the chicken-mixture as a filling for a wrap or serve it with your favorite vegetables. 

When choosing a teriyaki sauce, make sure you select one with the least added sugars per serving. 

If you don’t have 5-spice powder, you can use a blend of these spices instead: star anise, cloves, fennel seeds, cinnamon and ground black pepper.

 

Step by Step Instructions

Step 1

In a skillet heat the olive oil over medium heat and add the ground chicken. 

Step 2

In a pan, add non-stick cooking spray, onion and garlic. Sauté on low-medium heat.

Step 3

Stir in the ground beef and kidney beans into the pan. Add the tomato sauce and stir well.

STEP 4

Add the diced bell pepper and stir well. 

Step 5

Remove from heat.

Step 6

On a serving plate, add the Romaine leaves. Spoon 1/4 of the chicken teriyaki into the leaves. Continue until all leaves are filled with the chicken mixture.

Step 6

Top with the rest of the scallions, sesame and hemp seeds.
