It’s not always easy to find a balanced snack after bariatric surgery. Not all foods sit well in your stomach. And then there’s also the dynamic of trying to have a healthy relationship with food.

Chickpeas are legumes. Did you know that 1/4 cup of chickpeas has about 3 grams of fiber? But it’s not just the amount of fiber that makes this a great snack after bariatric surgery. Chickpeas are also rich in protein with about 6 grams of protein per 1/2 cup. Not bad for a plant-based food right?

Ingredients

  • 4 oz canned chickpeas, rinsed and drained
  • 1 tsp olive oil
  • 1/2 tsp paprika powder
  • 1/2 tsp onion powder
  • 1/4 tsp garlic salt
  • 1/4 tsp ground black pepper

    If you’re not using canned legumes yet, then here’s your cue to add them to your grocery list! Canned beans, lentils, chickpeas…they can add so much flavor (and of course, those incredible nutrients like non-heme iron and fiber) to your meal immediately.

    You don’t have to cook them. Simply rinse and drain them and add those nutritious legumes to your salad (or in this recipe – roast them in the oven or air fryer).

    Now, you can try different herbs and spices, like cumin powder, turmeric and italian seasoning. Add salt and pepper to your own taste!

    Tip: make sure that you thoroughly dry the chickpeas after rinsing, with a kitchen towel. This way, you preserve the crisp that every crunchy snack must have. 

    Pro-Tip: use 4 ounce Ramekins for better portion control

     

    Step by Step Instructions

    Step 1

    Preheat oven to 350F (180 C).

    Step 1

    In an oven-safe dish, add the rinsed and drained chickpeas. 

    Step 2

    Sprinkle the olive oil over the chickpeas and toss until fully coated.

    STEP 3

    Add the herbs and spices. Toss until fully coated.

    Step 5

    Place the chickpeas in the oven, about 12 minutes or until crisp.

    Step 6

    Let them cool off completely. Make portions and save what’s left in an air-tight container.
