Ingredients
- 6 small (low-carb) tortilla wraps
- 1/2 lbs (230 g) lean ground beef
- 1 cup (60 g) shredded lettuce
- 6 slices cheddar cheese
- 1/4 cup (30 g) pickles
For the sauce:
- 2 tbsp low-fat mayonnaise
- 1 tsp zero sugar bbq sauce
- 1 tsp mustard
- 1 tbsp diced pickles
- 1 tbsp vinegar
- 1 tsp paprika powder
- Salt and pepper to taste
Notes:
Substitute the low-fat mayonnaise for low-fat Greek yogurt for more protein
Substitute the ground beef for shredded tofu or ground chicken if you can’t tolerate beef
Omit the lettuce if you can’t tolerate lettuce
Step by Step Instructions
Step 1
Season the ground beef with salt and pepper. Set aside.
Step 2
In a mixing bowl add the mayonnaise, BBQ sauce, mustard, diced pickles, vinegar, paprika powder, salt and pepper. Whisk until well combined.
Step 3
Take 1/6th of the ground beef and shape into a small ball. Flatten the ground beef on the wrap.
STEP 4
Place the wrap (beef side down) in the skillet on medium heat. Bake, about 10 minutes or until no longer pink. Add a slice of cheddar cheese and allow cheese to melt for another minute or so (lid on).
Step 5
Remove the lid and flip the wrap and bake for another 1-2 minutes.
Step 6
Repeat step 4 to 6 for the rest of the wraps.
Step 7
Assemble your big mac tacos by adding the shredded lettuce, pickles and sauce. Serve immediately and enjoy!
