If you want to try a savory breakfast, then this egg-bake might be just what you were looking for. 

And the fun part?

You can chop up whatever vegetable you have left in your fridge and add it to this easy to make savory dish.

Here, we used eggs, zucchini, feta, chicken sausage and grated cheese. But that’s not all!

To boost the protein in this recipe, we added blended cottage cheese. With about 12 grams of protein per 1/2 cup, you make sure to add that much needed protein to start your day off right.

Egg bake with zucchini, feta and sausage breakfast bariatric surgery

Ingredients

  • 4 eggs, whisked
  • 1/2 cup (115 g) cottage cheese, blended
  • 5 oz (120 g) pre-cooked chicken sausage, finely chopped
  • 3 oz (90 g) zucchini, finely chopped
  • 2.5 oz (75 g) feta cheese, crumbled
  • 1 tbsp everything but the bagel seasoning
  • 1 cup (120 g) shredded cheese

 

Toppings:

Chopped parsley

  • Substitute the chicken sausage for turkey sausage or shredded chicken.
  • Try different vegetables, like chopped bell pepper, tomatoes, mushrooms and broccoli for a different variety.
  • In this recipe, we used grated Gouda cheese, but you can try mozzarella or cheddar as well. If you don’t prefer cheese, you can omit the cheese altogether.
  • Try different seasonings, like a mix of garlic powder, paprika powder, oregano and basil for a different flavor.
  • It’s not necessary to add salt to this recipe as the feta, grated 

 

Step by Step Instructions

Step 1

Preheat oven to 400F (200C)

Step 2

In a mixing bowl, add the eggs, cottage cheese, sausage, feta, zucchini and seasoning.

Step 3

Place the diced beef sausage on top of the (turkey) bacon.

STEP 4

Pour the egg-mixture over the bacon and sausage.

Step 5

Place in oven, about 15 minutes or until eggs are set and cheese is crisp.

Step 6

Remove from oven and top with parsley. Enjoy!
